College Level Garden-Based Learning?

Why should garden based learning be reserved for K-12 students?    If you have ideas about how gardening can enrich the college level class you teach, I’d like to hear about it.  Clearly, botany, biology, and classes in the sciences can make use of garden-based research and growing plants, but what about classes in the humanities, like history, philosophy and literature classes?  Any ideas?
